"Eat your greens" Asian Chicken Salad

I used to write down recipes that I made and liked enough to think that I would make them again. I first made this salad back in 2008 and unfortunately when I copied it down I didn’t note where I had gotten it from but I did write down the date and put a smiley face beside it!

The recipe as I copied it called for green onions but I have tons of fresh spring chives so I decided to substitute them. A delicious choice!

“Eat Your Greens” Asian Chicken Salad

  • 1 small head napa cabbage, sliced thinly
  • 1/2 bag frozen edamame, cooked then rinsed with cold water
  • 1/2 cup cilantro leaves
  • 1/4 chopped chives
  • 1 small english cucumber, cut intoĀ julienne
  • 6-7 radishes,Ā cut intoĀ julienne
  • 1 pound chicken (about 2 breasts)
  • 5 tablespoons low sodium soy sauce
  • 1 tablespoon peanut butter
  • 2 tablespoons honey
  • 1 tablespoon freshly grated ginger
  • 1 large clove garlic, minced
  • 1/3 cup fresh squeezed lime juice

Method

  • In a small bowl combine the soy sauce, peanut butter, garlic, ginger, honey and lime juice. Whisk to combine.
  • In a medium skillet add a bit of extra virgin olive oil, heat to medium or so and add the cubed chicken. Season with salt and pepper. Right before the chicken is done cooking add about a tablespoon of the dressing. Continue cooking until done, turn the burner off and let come to room temp while you prepare the rest of the salad.
  • In a large bowl add sliced napa cabbage, cilantro, chives, cucumber, edamame and radishes. Add dressing and toss to combine. Let the salad sit for about 10 minutes while the chicken is cooling…the dressing will wilt the cabbage a bit making it softer and helping the flavors to combine. Lastly, add the chicken, toss salad again and enjoy!

This smoothie is SO refreshing and good! I don’t know what came over me – the smoothie or the fact my spring break starts today at 4:45pm when class is over – but when I got on the treadmill today I bumped it up 2 levels on intensity and changed the speed from my normal 4.0 setting to 4.2! I power walked 4 miles and burned almost 500 calories! Come on bikini season!

Honey Orange Cleanse

  • juice from 1/2 an orange
  • 1/4 cup cold water
  • 1 navel orange, peeled
  • 1/4 cup sliced radishes
  • 1/2 cup pineapple, cubed
  • 1 teaspoon honey
  • 3 mint leaves
  • 1/2 cup ice

Method

  • Place all ingredients in the blender in the order listed and secure the lid. Turn dial to “smoothie” and let it run until it turns itself off.Ā 
  • Recipe slightly adapted from Vitamix.

Only a few of the veg/fruit in my house

January 25, 2013- I felt so much better today than in the whole past week! No moreĀ lightheaded-ness, I’m in a good mood and I can chew food tomorrow!Ā I even went to the grocery store and prepared. Got someĀ avocados, radishes, turnips, spinach, collard greens, peppers, tomatoes, cucumbers, cilantro and apples. I already had carrots, cabbage, lemons, bananas, sweet potatoes and celery left from my last grocery store trip last Sunday.

Look at this radish from Farm to Family! I got two of them and plan to slice them up and dip them in homemade edamame hummus!

Think it’s weird to go to the grocery store when I hadn’t had any solid food for three days? Well, then I got home and madeĀ gazpacho. I wanted it to be nice and cold and ready to eat when I get back from my walk in the morning! I left out theĀ jalapenoĀ peppers (figured that would shock my stomach), added only three tomatoes (because the organic tomatoes are expensive!) and doubled the cucumber. Cucumber is one of those easy to digest and packed with water veggies that is supposed to be good to have a lot of after a cleanse.

  • Had my green juice while looking over spanish notes. I had a quiz at 11 to study for.

  • Oh, cashew milk! I love you! I amĀ completelyĀ inspired to make my own version of a nut milk. I saved this recipe for almond milk yesterday and will try it out soon! As soon as I get a Vitamix…
  • My brother Jeremy was in town from NYC and I went to Starlight (a local bar) to see him. Only a club soda for me. I had to leave after about an hour when all the talking and loudness started making me feel dizzy.
